The Royal Decree of 20 January 1834 promoted the creation of slaughterhouses in special buildings intended for that purpose in municipalities where there was a large consumption of meat, as well as drawing up ordinances in this regard. Attributions that required the mayors, under the supervision of the civil governor of the province. In addition, on March 19, 1848, crimes against public health were specified in the Penal Code, as well as the regulations to prevent them. In this way, the Town Councils will promulgate regulations and ordinances relating to municipal markets and slaughterhouses.

Year 1931, regulation of the municipal slaughterhouse (40 articles). Place intended for the sacrifice of animals for supply and set conduct to be followed by all. It works under the direction of the veterinary authority that advises the town hall (hygiene and health). The slaughterhouse must always have plenty of water and the "matarifes y mondongueras (innards)" staff will close the taps. It operates every day except Sundays. They are stock animals: cattle, pigs, horses, goats and poultry for public consumption. Year 1961. The one who was lessee of the slaughterhouse, Salvador Ferrándiz Albert, offers to sell his Roman headquarters (1,000 pts.) to the town hall because the one in the slaughterhouse was damaged. The word "roman” has several meanings: 1. balance with unequal arms, in which the body being weighed is placed at the end of the minor arm and is balanced with "the pylon" (weight) that is run along the major arm; 2. in the flour mill, system of levers located under the millstones (gradue the fineness of much flour); 3. in the loom, each of the two levers with which the folding (clothes winder) is tightened; 4. in the mowing machine, lever to raise/lower the blade of the saw; 5. in the bread oven, set of levers to open/close the mouth of the oven; 6. in the cart, a set of levers used to brake. locution : "he raises his hand to the Roman and all at once says: that's fine” (having a good eye for calculating or judging things).
Year 1975. Inspection on the fight against African swine fever. The town's slaughterhouse complies with the regulations except for having adequate facilities for the cleaning and disinfection of the vehicles that transport the pigs (cement platform with drainage), installation of water and disinfection hoses, pit for collection manure and corrals to observe the animals. The city council undertakes to amend (correct) the deficiencies.
Year 1979, amendment to the fiscal ordinance on the municipal slaughterhouse service (rates). The economic study carried out to calculate the rates is as follows: 1) expenses, 320,000 pts. ; 2) income, 80 thousand kilos of meat per year, at 4 pesetas per kilo = 320,000 pts. Thus, the rates that apply are: a) cutting service, 4 pts./kg. of meat; b) stays in the slaughterhouse for each day spent overnight: beef, 200 pts.; sow or sow, 50 pts.; goat and sheep, 30 pts.

Year 1984, the Ministry of Agriculture and Fisheries extends the adaptation of the facilities of the municipal slaughterhouse for six months. that year at the municipal slaughterhouse, 4 butchers slaughter: Manuel Roig (Monday), Bautista Quilis (Monday, pork), Salvador Ferrándiz (Monday, pork; Thursday, pork and beef), Asensio Albert (Monday, pork and lamb; Tuesday, beef). The butcher Asensio Albert is advised to slaughter the beef on Thursdays.
Year 1986. The industrial survey of herd slaughter, meat preparation and preserves from the Albaida slaughterhouse is as follows: animal carcasses, small cattle (28 tons), pigs (69 tons), sheep (14 tons).
Late 80s, the inspection parties talk about a slaughterhouse that does not meet the hygienic health conditions of current legislation and that is without a registration number
Year 1992, last year that we find information about the slaughterhouse in the municipal archive with modification of the municipal ordinance of the public price and inspection parts. On December 27, 1991, inspectors from the community health center of Xàtiva informed the town hall that the slaughterhouse "DOES NOT ACCEPT the permanent exception as a low-capacity slaughterhouse" because it does not meet the conditions of the European guidelines ( 91/497 and 8/EEC of the year 1991): premises without siphons or lined walls, lack of lighting, corridors with the same deficiencies, staff toilets not separated, without cleaning and disinfection devices, lack of devices hot and cold water, lack of cooling equipment, waste water disposal, etc., etc.
At 12 o'clock on January 27, 1992 the Albaida municipal slaughterhouse closes.
